Chicken & sweetcorn soup is one of my favourite soups. With only a few ingredients you can make this yummy soup. It is perfect for lunch, a snack or even dinner with only 233 calories or 5 Weight Watchers SmartPoints a serving, how can you go wrong?!

*You must use creamed style corn in this recipe*





Chicken & Sweetcorn Soup

  • 4 oz Chicken Breast
  • 1/2 tsp. finely chopped fresh Ginger
  • 2 egg whites
  • 2 tbsp. milk
  • 1 tbsp cornflour
  • 2 1/2 cups stock
  • 8oz can creamed corn
  • salt and pepper, to taste
  • finely chopped scallions, to garnish


  1. Chop up the Chicken breasts and mix with the ginger.
  2. Beat the egg whites until they are frothy, add the milk and cornflour to the eggs. Mix until it is smooth. Add the chicken to the mixture.
  3. In a saucepan, bring the stock to a boil. Add the creamed corn to the stock and bring to a boil again.
  4. Stir in the chicken mixture, add seasoning to taste. Continue to stir until well mixed.
  5. Garnish soup with finely chopped scallions.
